NEW: CHOPPED MEDITERRANEAN SALAD

 

 

Serves 4-6

 

Dressing

  • Salt and freshly ground black pepper
  • 1 garlic clove, crushed
  • 2 teaspoons red wine vinegar
  • 1 – 2 teaspoons balsamic vinegar
  • 4 tablespoons extra virgin olive oil

 

Salad

  • 3 long green onions, cleaned, finely sliced
  • ½ medium cucumber, peeled and cut into 1.5 cm pieces
  • 2 small stalks celery, trimmed, cut into 1.5 cm pieces, (use leaves also)
  • ½ medium yellow capsicum, cleaned, cut into 1.5 cm pieces
  • 2 medium, ripe tomatoes, cored, sliced, cut into 1.5 cm pieces

 

Whisk the dressing ingredients in a medium salad bowl. Add the salad ingredients and fold through the dressing. Leave 10 minutes to gather flavour before serving.
